Pasta 201 is the second in a series of three pasta-making classes taught by me, Gourmet Faye! If you have attended one of my Pasta 101 classes, then you now know the basics of making your own dough, rolling it out, and cooking it. In this 201 class, we will be learning how to make filled pastas like ravioli, tortellini, & agnolotti. Our fillings will consist of a traditional Italian blend of ham and Parmigiana cheese for the tortellini and local Barbacoa from our friends at Boarri for the ravioli. I will have all the usual cheeses, butter, olive oil, fresh basil from my garden, and many other items to go along with your creation at the end of class when we end up cooking, everything we make. I will be demonstrating a sage brown butter sauce & a tortellini en Brodo with the tortellini that we make in a broth made from fresh beef bones and poultry that I get from Boarri craft butchers!
